It's nice to start the day with protein and no blood sugar spike. When we do long weekend house parties at the beach house, I set out a buffet style breakfast on the last morning, with a giant bowl of boiled eggs, and an assortment of whatever is left in the fridge -- it's been a big hit. Except since they are bread loving people they slice toasted bread into thin strips and dip them into the soft boiled egg in the egg cup. With salt and pepper this is delicious!
